What herbs or spices would be good in mashed potatoes?

I am trying to replicate chef Paul Prudomme’s mashed potatoes but he uses his spice blend that he sells and I do not want to buy. I am going to mash the potatoes and then saute the herbs in butter then and cream and pour into potatoes. I don’t want new recipes, I want to use this one I just need some suggestions for herbs or spices to use

  1. garlic is a must ….. any of the following finely minced, fresh herbs would be good: parsley, basil, oregano, rosemary … and either sea salt or Kosher salt, fresh ground pepper. Butter should be REAL butter

  4. This is my favorite dish, and there are lots of different ways to make this. One way is to had oregano and paprika, the usual(butter, mike), you can also add a dollap of sour cream to make a creamy dish!!

    Buca Di Beppo Garlic Mashed Potatoes Recipe

    Ingredients:
    2 pounds small red-skinned potatoes, skins on
    1/4 cup minced garlic
    1 teaspoon dried oregano
    1 teaspoon salt
    1 cup grated Romano cheese
    1/2 cup butter, softened and cut into pieces
    Directions:
    Wash potatoes and place in a large pot. Cover with water and bring to a boil over medium-high heat. Reduce heat to low and cook until the potatoes are tender. (About 15 minutes.)

    Drain potatoes and transfer to a large serving bowl. Immediately add garlic, oregano, salt, cheese and butter. Blend thoroughly with the whip attachment of an electric mixer.

    R ecipe: Paul Prudhomme’s Vegetable Seasoning MIX

    2 3/4 teaspoons sweet (not hot) paprika
    1 teaspoon salt
    3/4 teaspoon dry mustard
    3/4 teaspoon ground ginger
    3/4 teaspoon California red chiles, dried and ground
    3/4 teaspoon guajillo or ancho chiles, dried and ground
    1/2 teaspoon garlic powder
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon onion powder
    1/2 teaspoon cayenne pepper
    1/2 teaspoon black pepper
    1/2 teaspoon white pepper
    1/8 teaspoon dill seeds, ground

    Mix all ingredients. Use in stews and soups.

  6. Well, since you don’t have your favorite Chef’s seasonings, then I guess you have to make your own famous Mashed Potatoes with some seasonings of your own! Any of the following would be absolutely delicious:
    Salt and Pepper (I use white pepper for smashers, but you can use any pepper you like, even crushed red peppers if you like some heat) Unsalted Butter, Fresh Garlic, finely diced red/white onions, onion powder, garlic powder, chives, scallions, rosemary, thyme, oregano,flat leaf or regular parsley, cilantro, chicken/vegetable base, cayenne, celery seed, horseradish (one of my favs) paprika or tarragon.
    I have used all of these seasonings (in several different combinations)in my Mashed Potatoes over the years and these are my favorites, so best of luck and happy experimenting in what you and your family likes!

  7. I like chopped garlic chives myself. Also Caesar Rim is good sprinkled on them I discovered one day.
